Homemade Granola

I made my first batch of homemade granola last week and I'm hooked.  I got the recipe from this site:

I bought coconut oil from Bountiful Baskets and picked up some chia seeds, I've never actually had them before but figured this was a good excuse to add them to my pantry.

I made it a little too toasty last week which made the raisins too hard.  So here is my new version.

Homemade Granola

3 cups oats (I used 1 c. quick 2 c. old fashioned for variety)
1 cup dried fruit (anything you like preferably w/out added sugar) raisins are cheap
1/2 cup pecans (or nuts of your choice)
1/4 c. coconut oil
1/2 tsp cinnamon
1/2 tsp salt
1/4 cup chia seeds
1/4 cup flax whole or milled or mix of both
1 tsp vanilla
1/3 cup honey

Preheat oven to 325. Measure oats, fruit, and nuts into a mixing bowl.  scoop coconut oil into small saucepan and warm until liquid and hot: add cinnamon, salt, chia & flax seeds.  Stir together so the seeds get all gooey, add vanilla and honey.  If it's too thick heat until smooth and drippy consistency.  Pour hot goo over dry ingredients and stir to coat. Spread into a jelly roll pan (cookie sheet with sides).  Bake for 10 min. Remove from oven, stir mixture around and spread out again.  Bake an additional 10 min.  Remove from oven and stir.  If you want it a little drier/ toastier  repeat another 10 minutes of baking. Note: the granola dries out a little more when it cools.

Cool and store.  If your granola is still pretty moist I would store it in the fridge if you don't plan on devouring it w/in a day or two.

I mixed my cinnamon, chia seeds, and my added flax seeds in the wet ingredients because with my first batch I felt there was too much tiny dry debris in my granola.

  3. Made some more granola. One original batch and one with sweetened coconut instead of fruit and almonds for the nuts. I added the coconut after I toasted the first 10 min. (wanted the slivered almonds well toasted but not to burn the coconut) Then I did another 10 minutes stirred again and an additional 7 minutes. So tasty and nicely browned. I made it to eat with fresh fruit (I prefer no raisins if I top it with berries or bananas).
